hi there and welcome to the salted pepper
where we cook for real life using real food and we keep it real simple and
today we're gonna make one of my favorite quick dishes a sloppy joe we're
gonna do it right in the Ninja Foodi and you can see how quick and easy it is
first thing we're gonna do turn the Ninja Foodi on select the sear saute
mode. high is fine no need to set the time in fact it won't let you set the
time that's not an option I think they want you to stay right here when you're
searing in sauteing there's four or five different temperature settings but for
this we're gonna go ahead and stick with high now I'm gonna add in about a
tablespoon of olive oil I'm using ground turkey to keep my sloppy joes just a
little bit leaner but if you're gonna use ground beef you can probably skip
the step of adding in the olive oil because the ground beef is gonna have a
little more fat in it if you use an 80/20 blend you might actually want to
strain this after so you don't have so much fat in your sloppy joe which will
also create more liquid and your bun might not stay together and it could be
a big mess so if you're using 97:3 though you probably don't have to strain
it so we're gonna let the pot heat up before we put in the ground turkey or
ground beef and that way when we put it in it will start to cook immediately and
we'll have a little less sticking to the bottom even though this is a nonstick
pan because it's such a lean cut of meat it will tend to kind of stick and burn
so we really want this pot to be hot so that when we put in the ground turkey it
really has a chance to sear it and it will release it from the pan rather than
letting it get stuck on there once it gets heated up we're gonna add in our
ground turkey and our spice blend now what I have here is one teaspoon of sea
salt 1/2 a teaspoon of pepper and a half a teaspoon of garlic powder we will also
add in our onions and get those sauteing all right so our pan has heated up now
the Ninja Foodi inner pot is nonstick of course but it also is a
convex so the olive oil tends to go around to the sides of the pan so what
I'm going to do is I'm going to add the meat over to the side and then bring it
in with some of the olive oil and I'm gonna use my little Mix N Chop like I
always do when I'm doing ground meat here kind of move it around into the
olive oil that will coat that meat and then we can start breaking it up on the
bottom of the pan and see we're not getting any of that we're gonna continue
to chop this up and then I'm gonna leave it alone just to cook a little bit and
add in the onions this is one cup of Vidalia onions diced you could use
regular white onions or you could even use a red onion I mean if that's what
you have use it that'll be fine stir in these onions a little bit and then I'm
gonna put in my spice blend which is one teaspoon of salt half a teaspoon of
garlic powder and a half a teaspoon of pepper and you want to add it in at this
stage because we want to season the meat especially with the with a ground turkey
it tends not to have that much flavor so we want to kind of boost that and season
our meat right now
all right it's looking good so we're just gonna let it sauté for up maybe two
minutes three minutes at the most and then we're gonna add in our garlic now I
have about a teaspoon or two cloves of garlic here and the reason why I did not
add them in at the beginning is because I don't want the garlic to burn I want
to produce a little bit of juice down here from the turkey meat before I put
in the garlic and then that'll saute burnt garlic really adds a very bitter
taste to your food so you don't want to add it at the very beginning of sauteing
you want to wait just a few minutes and then add it in
and that's looking great I mean the turkey is really cooking and so now we
can add in our garlic just mix that up
it smells so good okay now we can go ahead and add in our 1 cup of diced
green peppers which is about 1 medium size green pepper add that in
wonderful right so I'm just gonna scrape this off here
the meats nicely chopped up into little bits perfect now we can add in our fire
roasted tomatoes as well as our third a cup of apple cider vinegar and two
tablespoons of Worcestershire sauce give this a little a little stir here and now
what we're gonna do is we probably could actually put this under pressure I think
there's enough liquid in the bottom there but I want that liquid to reduce
some so instead of putting it under pressure to let the flavors all come
together and finish cooking that ground turkey I'm gonna use the steam function
of the Ninja Foodi so let me get the lid and move it on use the same lid as
you do when your pressure cooking so let's stop this saute and go ahead and
get our lid on now when you're gonna cook under steam you want to make sure
that your valve the black valve on the top of your pressure cooking lid is to
the vent position if to the seal position you will build up some pressure
and we don't want that we want the liquid to reduce a little bit so we want
to steam we want to steam it so we're gonna put it to the vent
let's select steam and we just need to do five minutes there is no temperature
setting so there's no high or low with steam it's either on or off and we're
just gonna hit that steam button now what's gonna happen is a ninja foodies
gonna come up to temperature it's gonna build up the steam inside just like it
does when it's building pressure but it's gonna release the steam right back
out so we will see this move around for several minutes before we actually see
the 5 minute countdown okay so literally it took a lot less
time than I and thought or remembered because I have
done this before it took about two minutes to start the countdown so we're
gonna let it steam for five minutes and I think it's four minutes now and then
we will open the lid one thing to know about when you are using the steam
function is you can always open the lid so if you have it steaming and you want
to open it up to check on it you can do that no problem
it doesn't seal because you're not under pressure so if you want to give
something to stir or something like that you can do it but be very careful
because it is there's a lot of steam built up in there so I don't want you to
get burned don't put your face over there when you're opening the lid
alright so we just have a few more seconds left and then we'll remove the
lid and we'll add in a third of a cup of tomato paste and a third of a cup of
brown sugar this is gonna act as thickening for our sauce so when we open
the lid it's gonna look a little thin don't worry and open the lid away from
you just to divert that steam okay so you don't get a little steam bath it
smells so good but it is a little runny so now we need to add in our tomato
paste and our brown sugar
give it a stir and what we're going to do now is go back to the saute mode and
yes you could do this entire process on the saute mode you absolutely can
however I found that that five minutes of steaming really added to the flavor
of the dish so that's why I choose to do it that way
but if you just want to stay completely on saute go right ahead you just want to
get to the consistency that you need okay you've got to keep warm on that's
no problem and stop that hit the sear saute high is fine and go
ahead and start and what I'm gonna do is just get the brown sugar and the tomato
paste incorporated here and then sort of reduce it down just a little bit so that
it's thick enough for our sloppy joes
it's looking really good at this point you could certainly give it a taste too
in case you wanted to add more salt more garlic powder more pepper
you know season it up to your liking a little more sugar a little more vinegar
you know and then now is the time to do that it looks great so I have a bun here
and what I'm gonna do is when this reduces maybe about three minutes I'm
gonna throw in the rack right there with the sloppy joe mixture inside the inner
pot throw in the rack and toast the inside of the bun the reason why I want
to do that is I want to get the bun surface on the inside a little bit
crispy that way when I put on the wet sloppy joe mix it's not gonna go through
the bread soak into the bread real fast and create a sandwich that just falls
apart as you're trying to eat it this is smelling so good and it really looks
great and so easy I mean look you can make it in under 20 minutes alright so
this is looking great and I'm gonna go ahead and turn the Ninja Foodi off for
right now give this a stir I want the bubbles that are formed from
the boiling I want those to kind of settle down a little bit because I don't
want any splashing on to the top of my bun which is gonna be on the rack just
let that sort of settle down a little bit while I put in the rack and of
course the rack is clean okay great so everything's settled down it's no longer
really rapidly boiling so I'm going to go ahead and put my bun and I'm gonna
put it so that the inside is facing up towards the air fryer we're gonna go
ahead and lower the lid turn the ninja foody on we're gonna select the air
crisp setting 390 is fine you can even probably go 400 but I'm gonna just stick
with the 390 it's not gonna take 20 minutes but I'm just gonna load that in
and the beauty when you're cooking with the air fryer is that you can always
take a peek and see how things are browning up or crisping up okay so it's
been just about four minutes total and let's take a peek and they are looking
perfect so the edges are a little brown here but I can tell that they're nicely
toasted and they're just warm but soft on the outside and that's the way you
want them you don't want this part to get too toasted or it'll end up being
crumbly I need to get my little mitt so we can pull that wrap out
I'm just gonna go ahead and set this right over here so give a little stir
and we're gonna get this onto our buns and that little bit of air front also
help to reduce the sauce so it is really a nice consistency for a sloppy joe and
it's just smelling wonderful and looking great
- too much on but I want it to be a nice nice sandwich here put the top on give
it a cutting as that it's gonna make it a lot easier for me to eat especially on
camera I just love sloppy joes or something
about them reminds me of childhood and but I don't like a can sloppy joes I
never have and when I developed this recipe for sloppy joes wow they're so
easy to make you know this is awesome and I do have a recipe on my website the

really really good really really good so you get a little bit of the sweetness
from the brown sugar to get that little bit of a snap tartness from the apple
cider vinegar it's very well balanced and it's so much better for you than a
can give this one a shot it's a keeper and stay tuned because I figure out how
