Separate the egg white from yolks. You need only the egg whites.

Add a little bit of salt.

Mix on the highest speed of the robot till the eggs get whipped.

Use a small plate to make a circle on baking paper. In that circle you will form the Pavlova.

When the egg whites are whipped start adding the sugar - spoon by spoon. Not too fast, let the previous spoon get mixed well.

Add vinegar and mix for one more minute.

Check if the whites are whipped enough. They should stay on the spoon, not move and keep the shape when you touch them. It should also be very white and shiny.

Add the starch. You have to sieve it and then mix all together with a silicone spoon.

Put the pastry on the baking paper in the middle of the circle made before.

Form the shape you want to get. Standard one is a shape of a mountain with flat top.

Put in oven heated to 180° C for 5 minutes.

After that turn the temperature to 150° C for 90 minutes.

After baking leave the oven open in maximum 1/3 till it cool down.

Mix together mascarpone, cream and lemon peel for 1 minute at highest robot speed.

Put the cream on Pavlova and decorate with fresh fruit.
