I was 12 years old the first time I self-harmed

I was sitting in class hypnotized by the little shards of glass on my desk

I just accidentally smashed my new watch with my elbow

but I wasn't worried about that

There was a new kind of focus in my mind and without thinking

I picked up a little shard and dragged it through my wrist

For a kid, the feeling was hard to describe

I mean, it hurt and watching the blood pool out onto my desk made me feel pretty woozy

I even got sent home for the day but there was something else there

Another feeling I couldn't quite put my finger on

And I wouldn't for a long time

I did it for years without ever really knowing why

All through my angsty teens

It's what angsty teens did, right?

Just a phase?

To tell the truth I just liked the way it felt

In the end I realized it was about control

It was about some semblance of power in my life that I desperately needed

You see

I am a child abuse survivor.

My power was taken away from me at a young age

And I never really got it back

Even now

As I near 30 I'm always kind of afraid

Always expecting the worst right around the corner

Doctors call it anxiety

And for me, they call it a few other things too

For the longest time self-harm was my power over that

It's a confusing one, right?

Well, for me it makes sense to talk about an ideal, a way of thinking, to explain it better.

It's called nihilism and by definition is the philosophical viewpoint

that traditional values and beliefs are unfounded and that existence is pretty much meaningless

If you've ever been in the receiving end of such wrongdoing

If someone's ever abused your trust and certainly if you've ever felt low enough to hurt yourself

this might make a lot of sense to you. It did for me for the longest time.

You see, my nihilism was my armor

I couldn't be hurt in a world that didn't matter

If I got sick of the way things were I could always take the easy way out

That thought never left my mind and though it might be hard for people to understand,

just having that option is probably what kept me here.

Living life like there's no tomorrow can make you feel truly alive.

I'm not condoning or supporting any self-destructive behavior

but it needs to be said that this isn't crazy

If you're watching this, counting the scars on your arm.

You're not crazy.

You might be someone who has had the control over your life, that you deserve, taken away from you.

That doesn't mean you're just like me.

Things aren't that black and white.

It might be a release for you, like turning a high-pressure valve when you're feeling overwhelmed with emotion.

Well, it's your right to control that pressure.

It might be the only thing left you can feel, when all else is numb and meaningless.

Well, it's your right to control your feelings.

And feelings? Maybe they're so strong you can't properly express them, and this is the only way how.

Well, it's your right to control your expression.

Or maybe you just want to punish yourself?

Well, it's your right to respect yourself enough not to do so.

I'll be honest, I can relate to all of the above.

It's not a simple issue, it's not a simple thing,

and when you find yourself speaking to someone who doesn't have experience with self-harm,

you might feel like they couldn't possibly understand, and you couldn't possibly make them.

But that's okay.

They won't understand. Think about it, how can they?

They can however give you something very powerful.

A promise.

I'm just about twenty-nine years old now and have sixty-three permanent scars all over my body.

Some of them nearly killed me.

I thought I was being safe moving the habit to my thighs but nicked an artery on more than one occasion.

I consider myself lucky to be here, and I'm here because I opened up to someone who loved me

and made them a promise.

It was a friend. Not a mother, or a brother, just a friend.

One I loved, trusted and respected.

I couldn't feel the sadness in what I was doing

Like I said, it felt good. It gave me the control I longed for, it gave me my power.

But I could see it in her.

I'm not saying it's easy, I had to work hard to put myself in her shoes and see me as she saw me.

Self-loathing goes hand in hand with self-harm.

It's not our way for everyone, but it was for me

So it was hard to see the damage I was causing.

To really see it, I had to feel bad for myself, and that wasn't something I was about to do.

That felt weak.

Weak is what I felt all those times I couldn't stand up for myself, and now 'self-pity' felt weak too

I mean, it was hard wired in me.

But even if it feels weak, allow yourself that.

Because it's not weak in fact, it's a huge demonstration of strength

but I can't convince you of that, and you know what?

It doesn't even matter anyway.

What matters is trust.

Trust is a blind, made up human construct, right?

Sure. So, make it up. Put it in someone deserving.

If you don't know who, just ask yourself.

Who do you feel you can really be yourself around?

Is there someone in your life you can say absolutely anything around?

Like, the crassest, craziest thing, and they wouldn't bat an eyelid?

A friend like that is a good start. A friend you don't want to lose.

A friend you wouldn't want to see self-harming either.

Tell them what's going on with you.

Most importantly, show them your scars. If you have a slip, give them a call, send them a message.

Then make them a promise.

The promise I made to my friend still stands.

We actually fell out and I haven't heard from her in a long time

but it stuck with me that somebody cared. Somebody wanted me to be okay.

I haven't self-harmed in five years and I am immensely proud of that.

I can't say this works for everyone. I wanted to share this with you because it works for me.

Looking back now I realize it was such a shame a tragedy how little I respected myself.

When really, everyone should be the center of their own respective universes.

It's like RuPaul says, "If you can't love yourself, how in the hell you gonna love somebody else?"

Now, I haven't forgotten about you.

You who might be completely alone.

I was completely alone once too.

I can't say this put a stop to my self harm, but on that night, it may have saved my life.

I was in a particularly bad place at the time

Post-breakup. My partner had been cheating and I did not know how to handle the hurt involved in that.

I was a bottle and a half of black rum deep

Staring into a little mound of methylone on a DVD case, pressing cigarettes into my arm, trying to burn through to the muscle underneath.

I burned myself for hours

Toying with the idea of actually setting my entire arm on fire to see if I could kill myself that way.

It left the biggest scar of my collection on my body

and I look at it every day.

I used to be a chef, so I always told people it was from a bad oil spill; but I never knew if they believed me.

I passed out from the pain at some point.

I woke up, disoriented, but with a clearer head.

Instinct had me.

The pain was white hot, pulsating through every inch of my body.

I left a large patch of raw flesh, and while I'd passed out my arm had got stuck to the carpet.

The blinding pain of ripping it up was a bit of a wake-up call.

I was eighteen at the time and still living at home.

I couldn't tell my parents. Not a hope in hell of that.

But this injury looked ambulance-worthy, and the thought of suicide looked more and more promising.

How was I meant to hide this? What would everyone think?

Are they going to lock me up?

I needed some answers without repercussions. I needed someone to bounce these thoughts off

so I phoned the Samaritans

They're an organization in the UK and Ireland who are there to talk, about absolutely anything.

There are equivalents all over the world; suicide hotlines. I spoke to this guy in disdain at first, mockingly almost.

I told him what I had done.

I spoke to him about finishing the job.

To his credit he was one of the nicest people I'd ever had the pleasure of speaking with.

He stayed on the phone with me for an hour or so, just listening, piping in occasionally and

just keeping everything very calm.

I didn't finish the job. Because I had someone in my ear asking me not to.

Somebody cared.

Now, I didn't finish self-harming for years after that phone call either, but

that's just me.

It's not simple.

It's not black and white.

Every case is not the same. But that call did something for me.

It can do something for you too.

Just remember, it's as anonymous as you like. Someone will come on the phone and listen.

You can give a fake name, you can lie through your teeth about what's going on. It doesn't matter.

What matters is you're talking.

Letting this pain exist somewhere other than your own body or mind.

It's a lot easier to look at and understand when it's outside yourself, even in little ways.

I can't tell you what to do.

When it comes to a self-harmer, no one can, that's kind of the point.

But take it from me.

as someone who came out the other side of this:

The other side is there, and it will always be there.

This can stop.

You can be okay.

So, make a promise you can't break, or just reach out; anonymously if that's what works.

But, please, do something. Nihilism is easy.

If nobody cares, nothing matters, nothing can hurt you. Well, I'll tell you something.

I've never met you, but I care. I don't want you to hurt yourself.

You deserve more than that.

You deserve the true strength that comes from self-acceptance and vulnerability.

You deserve a happy life where you can manage your pain.

You deserve a fresh start.

It's never too late, for a clean slate.

If you can't find anyone to promise. Then please, promise me.

version because there's also a lot of information in this plan mine was about

131 pages and that's a lot to read I I'm a busy person so I really would like to

have something I can just put on my phone listen to in my car so I can real

picky and get all this information because it's good information it talks

about your body mass ratio talks about the real you know carbohydrates and

carbohydrates just really as bad as they say they are how there is no bad food

group at all it's just a matter of how much you eat and when you eat

intermittent fasting there's a lot of good stuff and then organifi is also a

good well known product as well so some of them are good but I just wish they

didn't try to force you to go through so those are the main things I don't like

what I think like is they have some as I said they have some really good

information and also what I like it's very

it leaves it open for what you want to eat so it doesn't it's not like a big

list of recipes like I was expecting it just gives you aloud fruits allowed

vegetables allowed these things like that and it just gives you a frame or

and from there you create your own menu and I think that's best because a lot of

diet plans just have these really straight menus on what you can eat and

what you can and I understand that logic because you know people just some people

just one of those bump-bump-bump of them and just do what it says to do but I

like that it gives you the flexibility because if you can decide how you want

to eat then you're more likely to stick with it so it just gives you a guideline

just so you know it's broken up into four phases phase one is where you're

basically cutting out your carbs you're only drinking water just so you know a

lot of cook low carb diets that you drink milk this one no you're drinking

so for you soda fans you know be prepared for that okay and then your

phase two that's what you're gonna start doing your fasting so you can do you're

gonna do a 24 hour fat fast you can anything with that there's some other

fasting in there as well phase three is where you're gonna be doing different

kinds of food groups that they want to have in their phase four is where is

towards the end of the 21 days that's another thing it's 21 days where you

will begin to ease back into the normal world and what a another thing I really

like is that it gives you a plan and how to base back into a little while to

prevent you from gaining the weight back because that's one of the biggest things

I mean any diet you can lose weight a problem is once you get off the diet

rule you're right back to where you started or more for worse in a lot of

cases so this gives you good you know good tips on what you need to do in

order to prevent yourself from gaining that weight back and still living a

relatively normal eating life and then it has some really good

exercises in there um now one thing that some of them women may not like is

there's not a lot of cardiovascular exercise in there and they're actually

right to do that because cardiovascular exercises are the least effective

exercise when it comes to those anyway because if you do some sort of weight

training something that will build up your muscle mass you will burn more fat

you'll turn your body into a you know more of a fat-burning machine whereas

you say you spent an hour on the treadmill well once you get off the

treadmill you'll you'll keep burning fat for about maybe an extra thirty minutes

whereas if you built those muscles up you're gonna be both you're gonna be

burning fat for hours and hours so that is important and you do need to know

that other than that I would say this is actually a pretty good system it is

something that I would recommend it may not be for everyone I would definitely

check it out first know yourself and make sure that it is something that is

that is web-based and online.

It's free and it's easy to use.

So let's get started.

If you haven't done so already,

There is also an extension you can get in Chrome.

As you can see right up here. I can just click this extension.

And it will give me the option to use screen and cam,

just screen,

or just cam.

You can use full desktop or current tab.

Down here, you can change your photo.

You can also hide the menu.

This is where you start recording, pause,

and cancel the recording.

Now there are many different ways that you can use Loom.

And they have several different ideas for you on the Loom site.

and share it directly through an email

or through a messaging center.

You can share it on your Slack if you use slack for communication.

Now, let me show you a couple of these that I really like.

Now in Gmail, if I want to send a particular message to somebody,

I actually have it integrated with my Gmail so that I can just go down here.

Send a video with Loom.

And when I click that I can either create a new recording, directly from my gmail.

I can go to my videos, or I can just pick the most recent recording.

Another handy way is if you use Trello,

with your team,

or use Trello with a client.

You can add links directly in Trello.

Let me show you how that works.

I've got a demo board and a demo thing and a little card called test.

Now, say I want to send a little video about whatever this card is.

I can go back to my Loom,

I copy the link,

I go to my Trello,

and put in, watch this video please.

I'm gonna press ENTER,

and just paste the link. And once I click save,

It's going to put the video right in there.

So that they can watch it directly from in Trello.

When you're on Loom,

you can click on your little icon click on account settings,

go down to integrations and you can see all the other things that integrates with.

I have link integration and full integration on Gmail.

But it integrates with several others. I also have Trello activated,

Google Docs,

Dropbox,

And it doesn't say Slack on here. But slack is definitely an option.

The reason I don't think slack is on here

is because it's already down on here. Once you integrate with slack,

it's a square directly in here. so I could instantly

click on sharing this here,

and put share on Slack.

Now when I go over to Slack,

that video is already uploaded here. And they can watch it directly in Slack.

Some of the other things that you can do with your video

is you can take that link and you can paste them to Facebook.

Here is everything you need to prepare for a smooth transition!

First, you need to find housing,

which means you need a cosigner whose tax residence is in France.

Instagram is yet another social media

that you have to handle and manage,

and it takes your time away from being creative,

or working on building your small business.

However, in today's day and age where the popularity

of Instagram is only gaining momentum,

you really should have a presence on that platform

just so you can finish the conversation that starts,

"Hey, are you on Instagram?"

If you say no to that question,

you might be losing out on collaborations,

on customers, on exposure,

or just continuing on the conversation

and showing people what you do

and why you're special.

A lot of people have the notion

that if you have an Instagram account

that it's one more daily habit that

you have to tend to lest it is useless,

and that is not true.

In this video I'm going to show you

the profile tricks that you need to have a strong

Instagram presence when someone finds you,

scheduling tools that will make it easy

so you could schedule a year's worth

of content in an afternoon,

and some other tips and tricks

that make Instagram not so terrible.

This is Tech Tip Thursday,

and today's Tech Tip Thursday I'm talking about tips

for Instagram, for artists, creatives,

and people who hate Instagram.

We will have a lot of social media

and other technical tips down the road,

so be sure to hit subscribe

You have this, along with Motivation Monday,

and other amazing interviews with creatives

who are trying to make it in the world.

There are a lot of reasons for you

to have an Instagram account.

If you're an artist, creative,

or a small business entrepreneur.

You need to reach various audiences.

You need to see insights into

who is interested in your products.

You just wanna get your work out there and recognized.

But what are some of the reasons

that you don't wanna be on Instagram?

They could be deeper buried than you think.

First of all, there is this idea,

especially with artists and creatives,

this icky aversion to self-promotion.

However, if you're a creative, if you're an artist

and if you're an entrepreneur, it's really part of the game.

And I think in this day and age,

everybody understands that you

have to get your message out there.

So if you have a fear or an embarrassment

that there's someone that you love or hate

that might roll their eyes at your attempts

to succeed in the world,

all I have to say is that wonderful quote,

"Those that matter don't mind,

"and those that mind don't matter."

Keep that in mind when you're trying to promote your work

and trying to build your success.

Also, you might be worried that Instagram

is just gonna be a suck on your time

and you have better things to do.

I totally get that.

But I can kinda make a parallel of

working with Instagram like baking a cake.

Some people might think, oh my gosh, I cannot bake a cake.

I have to go get the flour and the eggs

and the measuring and figure out the pan

and do all of these things.

Or you might just go get a box, get an egg, mix it up,

and throw it in the oven.

Instagram can be just like a box cake.

You don't have to do everything from scratch.

There are tools that you can use.

They can help you get to where you need to go.

Step one, if you don't have an Instagram account,

is, of course, to get one.

So I'm going to go over the steps

for setting up an Instagram profile.

You can do this on a computer,

or you can also do it on your phone.

Step one is downloading the app, of course.

You can go to the app store.

Search for Instagram.

It's right there.

Get the app, open the app up,

and then you have to put in your phone number

and then your preferred profile name.

You might have to play around with the profile name.

And here are a few tips that you should think about

when you're picking your profile name.

One is you want your name to be easily searchable.

So don't get cute with different characters or nicknames.

If it's possible to have your name

or your company name or something very similar,

then you should absolutely try to get that.

You can also use underscores or numbers

if those are appropriate to get that

username or profile handle that is easily found.

Also, don't forget that you're going to be saying

this handle out loud to people when

they ask you if you're on Instagram.

So just try to make it simple, straightforward,

but also in line with who you are or what your brand is.

Now that you're all set up with a profile,

it is time for you to put in the information for your bio.

I have seen so many people really miss an opportunity

to make their bio the most useful

and powerful tool in their Instagram profile.

One thing that you should absolutely try to do

is talk about what's in it for the people

who are searching for you, or who see your profile.

I know the immediate reflexive response

is to write about yourself.

It is a bio after all.

But you want to present what might

interest this person into following you.

So if you're an artist or creative,

put the kind of art or the service

or the creative thing that you do.

And be specific.

If you're a photographer, what kind of photographer are you?

Are you a wedding photographer?

Are you an infant photographer?

What kind of artist are you?

Are you a street artist?

Are you a fine artist?

Do you work in oils?

Do you work in illustration?

Put those things at the very top

so the person that comes across your profile

knows what they're in for if they follow you.

The second profile tip is, if you have space,

definitely write something about yourself

that can be relatable to the people who are following you.

Put in the location where you are.

That is really important because someone is more likely

to follow someone in their hometown or their home state

than someone who's in another country, say.

So definitely put in your location.

And the last and most important, important thing

that you can add to your bio is contact information.

This could be a link to

your professional or personal website,

to your Etsy shop, to another profile about me,

Behance, a portfolio site.

You want people to see your Instagram account,

become totally enamored with you,

and want to learn more,

and they need a space to do that.

One of the free tools I'm going to talk about is Linktree.

Linktree is free,

and it allows you to have one link in your bio

and when they click on that link,

you have another list of links

that you can use for your Linktree profile.

This is a way for you to link to many different websites

or accounts just from that one

website URL in your Instagram profile.

Pretty cool.

So step one is you have your account setup.

Step two is you have an awesome profile that works for you,

and gets people interested and following you.

Now it comes time for posting things.

I understand that you do not wanna spend days

and days and days posting every single day.

And luckily, Instagram has made it possible

for you to auto-schedule posts

if you have a business account.

I highly recommend if you're an artist or creative

or small business that you have a business account.

It's really easy.

You go to your profile settings,

and you switch to a business account.

That does a couple of things.

Number one, it allows you to put contact information

and email, or a phone number that people can reach you,

but also it allows you to use third-party tools

to schedule to Instagram.

There are a lot of third-party

Instagram scheduling tools out there.

However, one that is free,

and I'm all about free right now

so people don't have to spend a ton of money

on their Instagram marketing.

Another reason that people might not

wanna use it, is Hootsuite.

Hootsuite allows you to schedule

30 scheduled posts for free.

You can get a Hootsuite,

and Hootsuite allows you,

you can do a single photo post.

You can type in your caption, which is really important,

and you can add hashtags,

and then you can schedule posts once a day,

once a week, once a month, so you can add consistency

to your Instagram feed without the need to

attend to it on a daily or weekly basis.

One drawback to auto-scheduling Instagram posts

is that you don't get the filter features

that are so neat in the native Instagram interface.

However, another free tool that you can use to add filters

to some of your images prior to

putting them in auto-scheduler is Canva.

I loves me some Canva.

I use Canva all the time.

It is free.

It has some pre-defined templates,

including an Instagram template so you know

that it's going to be the right dimensions.

And it has some filters, so check out Canva.

You can pre-filter your images,

and then you can put them in Hootsuite

and schedule them.

You can schedule these so that you are consistent

or you're always coming up on Instagram,

but I also wanna argue that if you just want

a bare-bones Instagram presence,

just have at least nine photos in your profile.

The reason that nine is the magic number

is because when someone sees your profile,

they're gonna see a grid of the first nine posts.

That's the square.

And you don't want your Instagram profile to be bare.

Have at least nine images.

Your profile, your contact information,

and if you never wanna touch Instagram again,

I don't blame you,

but at least you have something that you can show someone.

They can tag you, they can look at your work,

and they can find out more on the link in your profile.

Alright, I hope I convinced you that Instagram

is definitely worth a little bit of time and trouble.

Market research is one of the most important steps you should take before

crafting your message and ultimately launching your project.

The message you opt for when conducting the research will depend on many factors like the

size and location of your target audience as well as the resources at your disposal.

Here are the four most common and most effective methods you

should utilize all performing market research.

One-to-one interviews

Although they might be a bit more time-consuming one-on-one interviews will bring you

insight into individual opinions of consumers and potential buyers that

might different from those you'd get from customers in group settings.

You can do them the traditional way by meeting face-to-face over coffee

but interviews can also be conducted over the phone or via email which makes

the whole process quicker and data processing and analysis much more convenient.

Surveys

Conducting surveys and collecting customer information is

now easier than ever thanks to tools like Typeform and Survey Monkey.

Surveys can be drafted up quickly and can be shared with just a few clicks on your

social media like Twitter and Facebook.

You can even give your fanbase a little

nudge with incentives like contests, discounts and prizes for customers who are

willing to give you an insight into their habits and preferences

Focus groups and workshops

Although they might take more effort and resources to

organize focus groups and workshops allow you to pinpoint your target

customer base then dig into their motivations and purchasing decisions.

Contrary to popular belief they don't have to be really corporate and formal

in fact you're probably much more likely to get authentic responses from people

who are more laid-back and comfortable with the setting.

Try framing the focus group as a discussion with 10 people and pizza

and you'll be astounded by the results you'll get

Secondary research

Lastly the most convenient method to

gain information on your target audiences are the ample resources that

are at your disposal thanks to the internet

While you should definitely not rely solely on secondary research it is a great starting point on which you can

base your further marketing research

Look for things like industry news, competitors' content, articles posted by trade associations,

and utilize networks like LinkedIn to get the most out of your research.

Configuring Foreign Exchange Rate and Amount Overrides for Historical Accounts in TRCS - Duration: 3:38.

In this tutorial, we'll show you how to configure foreign exchange rate and amount overrides

for historical accounts in Oracle Tax Reporting Cloud.

You can override the current period foreign exchange rates and amounts for Book

accounts that require historical rates.

Book accounts are located under the Income Statement and Balance Sheet hierarchies in

the Account dimension.

During currency translation, you can use a historical exchange rate in place of the current

period exchange rate.

Alternatively, you can use the historical translated amount for the current

period translated value, in which case currency translation does not take place.

To configure an account to use historical override rates or amounts, you edit

the account's Exchange Rate Type property.

I'll configure the Common Stock account to use historical exchange rates

by selecting Historical Rate Override.

I'll configure Paid In Capital to use an amount override by selecting Historical

Amount Override.

When you select Historical Rate Override or Amount Override Rate for an account,

the account is automatically added as a shared member to the

FCCS_Historical Accounts hierarchy.

The base-level accounts in the FCCS_Historical Accounts hierarchy display on the FX Rates Override

form, which you use for entering rates.

After changing member properties, you need to refresh the database in

order to apply your changes.

To enter override rates and amounts, open the FX Rates Override form.

In the POV, select the entity for which to enter historical rates.

The form displays rows for all historical accounts in the FCCS Historical

Accounts hierarchy. For Historical Rate Override accounts, the Rate

Override column is available and the Amount Override column is read only.

You enter rates to translate from the base currency of the Entity in the POV

to the currencies in the rows.

For Common Stock, I'll enter a rate of .85 as the historical rate to translate

from Canadian Dollars to US Dollars for all periods.

Rates and amounts for historical overrides are stored in the Consol cube, so if you are loading rates

from a file or using Data Management, you should make the Consol cube your target.

For Amount Override accounts, the Amounts Override column is available and the Rates

Override column is read only.

You enter the translated value to use for the account.

For Paid In Capital, I'll enter 800,000 in the Amount Override column as the US dollars

translated value for the account for all periods.

It's not necessary to run the Compute Rates rule after you enter override

rates and amounts, since no triangulation is involved.

how to handle insurance claims. After a car or motorcycle crash, we have a lot of

questions about how to handle the insurance companies . Even more daunting

is trying to understand your coverage and insurance policy. Here are some

important things to remember after a car accident: Never give a statement to the

other driver's insurance company. It will only be used against you down the road.

Never sign a release or accept a check from an insurance company without first

speaking to a lawyer. You may be giving up your right to sue and voiding your

own insurance coverage. Do not speak to your own insurance company until after

you've consulted with an attorney and know your rights.

Make sure you see a doctor within the first 14 days of the crash or you could

lose up to $10,000 in medical and lost wage benefits provided by your own

insurance policy. Keep receipts of all expenses you incur after a crash, as the

insurance company will deny any undocumented claims.

These include receipts from over-the-counter medications or from

renting a car while yours is in the shop. If you're not sure if a transaction is

relevant, keep the receipt just in case. Insurance companies are hoping you will

make mistake which will save them money and prevent you from obtaining justice.

I'm going to be talking about the differences, or similarities, between

probiotic foods and fermented foods and is there a difference? When you add

bacteria and microorganisms to foods, there's a process that makes it tasty

and nutritious; it's called fermentation. But there's a misconception that

fermented foods are probiotic. For example, not all fermented foods are

probiotic. Beer and wine? Those are fermented foods, but they don't contain

live cultures. And then, if you have a fermented food but bake it or can

it or pasteurize it, that eliminates that probiotic benefit. So can

you have fermented foods that contain live organisms that are not

"probiotic"? Unfortunately yes, so just because it says that live

cultures doesn't necessarily mean that it's going to give you the health

benefits associated with populating your gut health. Now it could, but there's an

important distinguishing characteristic and that is asking if there some sort of health

Rosio Sanchéz - Mexican food with soulfulness - Do what makes you happy - Duration: 7:29.

My name is Rocio Sanchéz and I own two taquerias and a restaurant called Sanchéz.

We started in 2015 and it was basically to open a taqueria,

like small, hole in the wall, fun little place, giving it an authentic taqueria feel.

And the reason we opened the second one, six months later was because we needed,

we really needed a space that's permanent so that's the reason for that

that's why we have two taquerías, and then shortly after that we opened the restaurant,

not shortly, a year after we opened the restaurant and that just kind

of happened. I had been looking at this space that we're in now two years ago,

for a taquería and it wasn't at the right time, so we skipped it and then

it came up again. That is like, oh this is amazing! This is the space that we need

to have because it's up again. And I had just finished doing the collaborative

pop up with René in Mexico and that I think made a huge influence on my state of mind.

So when I came back to Copenhagen and this place was available

you know I sat down and wrote, okay what are we gonna serve what's this place gonna have,

and suddenly it's like it was more than tacos, it was tostadas, it was snacks, it was desserts so it

was really fun to see how that was coming out as for something

that I thought that I never wanted a restaurant. I thought I just

wanted a little like taquería and I would be happy and making like these

small bites was really fun for me.

Yeah I started cooking, I started baking,

I was a pastry chef for a long time so I started baking when I was a teenager and

then quickly went to cooking school after that, for pastry. Then I was working

in Chicago for a couple of years trying to find out what I wanted to get into,

in kitchens and then I went to New York to pursue a

dream job that I wanted that I in the end was able to get and I stayed there

for three years and then I moved to Europe looking for a challenge.

I just wanted to be challenged all around and that doesn't mean just like in the

restaurant, in the food, or in the bakery wherever I'm working I really wanted to

to just move myself to somewhere else and learn just a different way of living,

a different culture. At that point it could have been Italy, it could have been

Spain, it could have been, I was, I took a one-way ticket, one bag and I thought I'm

gonna find a job somewhere something's gonna happen and I was determined

and after a few months I was able to get a job so I it ended up being Copenhagen,

and I was so happy for that because I think that completely changed the

direction everything took and coming here was exactly what I wanted, I was

able to you know be inspired by tasting things for the first time that I had

never you know I didn't want to just go to another city in the States and

working with the same things and coming here and having rye bread and having

amazing amazing dairy and fruits and no different fruits that I've never had

different vegetables I had never had being exposed to all the wonderful the

hirable family that has been exploding in the past few years of Renee

having that journey has been a lot of fun and definitely changed a way also I

like to taste things and with all that experience I also try to really where we

cook and we try to think about like Mexican flavors we really want to make a

lighter version of what we know maybe we've had a pork stew for example I have

a pork stew that I grew up eating that I loved my favorite for my mom and I used

to make her maker I would ask her do you make it for me

and it's like very traditional I would say it's a chicken soup I think that's

how it makes you feel like someone's taking care of you that dish for example

it's quite heavy and it's pork and and here we're we make a version that's

gooseberries and vegetable stock and avocado and it's it still has all these

homey flavors that's kind of like what I want to do with this place or you can

tap you can still have this feeling of like the home cooking the soulfulness in

a way and the spice a little and but not necessarily be so heavy which Mexican

food can be heavy so we try to keep it highly vegetarian as much as we can in

the future I just hope that well I hope this place continues and flourishes and

I hope that we can give more opportunities to people I think that's

very rewarding I think having the restaurant and going with this and

making dishes and all that that's a lot of fun and that'll always be there but

if we can somehow have a stronger connection with Mexico with the

ingredients that we're importing and with the people that we work with that

would really add another cool level that I would find very satisfying and it

seems kind of funny to say that but it is true because you see how all these

things are working and and how our business maybe affects other

people on the other side of the world so it's a it's a huge important thing for

me that hopefully we can get better at if we're successful I think that's uh

becomes the dream of our restaurant owner and I'm slowly seeing that that

you just want to like help other people if you can just because everyone's

helping you everyone's here is helping me achieve my

dream so you kind of feel a little responsibility to be able to help them

back I really mean it I think it's that's a that would be the

ultimate satisfaction where you can see that you know you can help other people

and or even if it is just helping them grow within the company and so that's so

cool I think that it's important not to care too much what people are gonna say

I think in the beginning I was really scared of that like what people would

think of me on all on both ends the Mexican

born person American born person I'm I was born in the States

Mexican parents so there's that you know you're not Mexican

thing or you're not American you know it's a hard thing to kind of define and

in the end and it took opening this place for me to say fuck it I don't care

like and just I'm doing I'm gonna make whatever I feel like making and if I and

I feel inspired by stuff from Mexico you know what I think that's important for

most people to understand that you just need to make yourself happy and there

were always be people that disagree with maybe your life but in the end it is

your life so it's important to follow what you feel what you're gonna do
