This week on Dining Out with
Comedienne Joy, it is all about the
chicken. That's right! My favorite food,
the golden bird! And one of my favorite
spots in downtown Birmingham is
Yo Mama's, Why?... cause she know how to make some
chicken! In fact, it's so good, I will
her to be my real mama!
Mmm, mm, mmm!
Customers line up Monday through
Friday at Yo' Mam's restaurant
that's located in downtown Birmingham
for some of these delicious
fried chicken wings. Now usually
the chicken wings are paired with
her famous chicken and waffles.
And when I tell you these are some of the
best, it got to be, because it's from
who? Yo' Mama's!
- The seasoning of course I
can't tell you, Joy,
what it is but
we do that, we come in the morning and
wash it, and then we season it, and
it's usually marinated probably
an hour before we actually open.
The chicken and waffles
that's probably our biggest seller.
We sell a lot of wing plates, and
so our chicken, you know, we
run through a lot of chicken during
the day. Because we're only open for four
hours, so... - Now I'm not the only one
that raves about those good delicious wings
at Yo' Mama's restaurant.
- I think it's great.
These are some of the best wings
I've ever had. -Broccoli is yummy,
so I feel, I don't feel
as guilty about eating the chicken
since I'm also eating broccoli. But the
chicken is also yummy!
- This so good, I'm gonna have to ask you more questions!
- Ok. - Can you adopt me, mama?! [laughter]
- No. - Come on mama, adopt me I need
you to be my mama right here ya'll! I gotta
get this chicken every day!
- Yeah, you can come here and get it any day of the week.
Monday through Friday. [laughter] - You heard that, and you
can too! And while you're here... - From 10:30 to 2:30.
- That's what I'm saying. When you're here,
get me some too!
- Well here's a tidbit that I learned about the wings
at Yo' Mama's. They are made with
a special gluten free flour.
So if you have a dietary restriction,
or want to be healthy, I say
get you a few more!
- We fry our chicken in gluten free flour,
so that's probably another thing
that gives it a unique flavor.
Well, it's just a hot wing sauce that we use.
I actually make it in house.
So we prepare that, and
we set it to the side. You can get the
hot wings whichever way you like.
You can get the wings with the sauce on it or
not, it's a sweet/spicy sauce
so most
people like it even if you don't like
really hot food.
It's the perfect, you know in the middle
of the road type deal.
- Chicken is ridiculous. I got some
hot wings and a regular.
It's ridiculous. - So you're my kinda
guy? You gotta get both of them, the chicken is amazing!
- That's right! [laughter] - What do you think about it sir?
- It's absolutely fantastic. The batter on the fried
chicken is really unique, it's really great.
- I bet this gonna be so good, maybe
I can figure out what's in here.
- Oh, lord
mama. - Pretty?
It's sweet and spicy, so
it's not like overwhelmming like hot.
- Mm-mm. This is so
perfect right here. If you ever have
some leftover sauce, can I come and
lick the plate?! [laughter]
- I give you some.
- Listen, ya'll gotta stop what you doing

- Now, there were two competitions that
eating at Yo' Mama's chicken and waffles,
one who oculd eat the most
and two could eat the
fastest when it come to their
delicious chicken and waffles. And since I'm
the queen of chicken, I thought I would
join the fastest.

- I was thinking of a master plan
until something happened to the left of me.
- This lady right here,
hey, if you had a chicken eating contest
I'd know she woul win off the cleanest bones!

part of the competition! Look at
him! He is just gobbling this food
up! I mean,
is it the last supper? He is going in!

Joy! Everytime I come in the kitchen
you in the kitchen Joy. Eating up all
the food. All the chitlins, collard
greens, all the pigfeet. All the
hogmosh!

- Everybody knows that my
favorite food is fried chicken.
No matter how you cook it! But there's
nothing like a delicious chicken wing,
to make your day! So last season I
took you to my friends at Wings 'R
King over off Tallapoosa
that are connected to the gas station.
Now, they have another

right across the street from Sam's,
and guess what? They have new flavors and
expanded menu, but the wings

If you're a real chicken wing connoisseur
like myself, then you know

So who says that you can't have your
cake, your kit kats, and your
fruit at the same time?
Well guess what? You can get them both when

- Ok, first of all
you can take a yellow cake, chocolate
or strawberry, whichever flavor you would like,
and then we bake the cake
at 350 degrees
and we let it chill.
And after it cools, we also
ice it. We ice it with chocolate because we
feel like that's a great icing
for the kit kat cake.
After we ice the whole cake and put it in the
refrigerator let it sit, then we
take it out and put the kit kat bars on there.
Break the up two at a time and put them
around the cake.
After you finish assembling that, you can top it off
with strawberries, raspberries
blackberries. You can do
pineapples, you can do whatever fruit, but we usually
like to do berries on the cake.
And then we drizzle it with
caramel, chocolate and strawberry
sauce.
- And if you're
like me, you are simply
drooling over this kit kat cake,
and you're probably wondering like I am,
how do you even cut
a cake that is beautiful as this kit kat cake?
- Ok, we're gonna slice the cake and just
go in between the kit kats.
You know what I'm gonna be
greedy. Instead of going
every two, I'm gonna go in between
every four.
Some
people like to have two kit kats, some people like
three, and so we just slice it in
between, put it on a plate, and drizzle it
with some more sauce.
And if you want to feel extra
bad,
you can add some strawberry to the
fun.

got yellow cake, it's awesome
and super sweet,
if you notice here,
we have some chocolate frosting

Before the break, we showed you the
kit kat cake, made by
entrepreneur Kenya Pickens

Now another one of her popular cakes
is the strawberry shortcake.
- Now we're doing the
yellow cake for the strawberry shortcake
It's a good idea for
if we might have made some extra batter
and you want to know what to do with it,
the yellow cake is a cake for the strawberry
shortcake. - She starts by
spreading out a cake layer
of whipped topping across the cake.
- Now we're gonna add the strawberry sauce
on top,
and we like to heap the
strawberry sauce in the middle
just a couple of spoonfuls.
Now we're gonna put some fresh
sliced strawberries,
they were frozen but they unthaw. You can do
fresh, frozen, however
you like.
So we just place our cake on top
like this.
And now what we're gonna do
is we're gonna add another
layer of the cool whip.
- Because the strawberry
shortcake is such a light and
delicate cake, Kenya uses
these sticks to put them
together so the layers don't slide off.
Next up, the
entire cake is iced down and
it is ready for the good stuff!
- And it's ok if the juice runs where it may
that's what we want it to do.
- And then
the cake is topped off with
fresh slices of
strawberries. Mm! That looks
simply incredible!
- And now for the
sauce.
And we just like to drizzle the sauce
on there, I like to make the sides a little
bit heavier so it can run down some.
Then we're gonna top it off with
one more strawberry.
Top it off...
and now you have your strawberry shortcake.
- Very good.
Like, the texture
really nice and flavor.
Like my grandmother's.
Real good. - Now we're gonna do our
lemon pound cake.
I'm gonna cut my cake with a serrated knife
the serrated knife does cut the cake
nice and evenly.
Gonna top it off with some
cool whip and
if you really want a lot of strawberries
hit it with the glaze.
And now
gonna turn a lemon pound cake
into a strawberry lemon pound cake!
