In this video I will show you how I make Waayke.
Waakye is a Ghanaian rice with beans dish which is characterized by its brown or burgundy color
There are two ways of making Waakye.
Traditionally it is made with the sorghum leaves.
Which gives it its burgundy color like the the rice on
the left side.
But as sorghum leaves are not always available,
you can also use baking powder.
That will give the rice a more brownish color like the one on the right side.
In this video I will show you how to make both.
So for making Waakye you will need :
Beans, I always use black eyed peas but you can also use kidney beans
You will need rice, I used jasmine rice but any rice will do
You will also need baking soda or dried sorghum leaves.
And finally you will need Salt and water
I will first show you how it is done with Sorghum leaves
Before you start make sure to soak the beans for at least 7-8 hours.
I soaked mine over night
Bring the soaked beans to a boil, I used one cup of dried beans.
Wash the sorghum leaves and add them to the beans.
I issued about 5/6 dried sorghum leaves
So as you can see its already giving off its burgundy color, and its only going to intensify
as we cook it.
So put the lid on it and cook it for 30 minutes.
The goal at this point is to get the beans a bit tender but not too soft.
As you can see the color really intensified and the beans and water have a very burgundy color.
Now take the leaves out and add the washed rice, stir the rice and beans together and
add some salt to taste
I wont be adding any water as of now because we want the rice to steam.
So let it cook for about 20 minutes, keep checking on it,
if it needs more water sprinkle some on it and when the rice and beans are soft, your done.
Now I will show you how you can make this with baking soda
The process is almost identical
Also here you will need to soak the beans for at least 7-8 hours or over night.
The difference with this method is is that you will need to cook the beans for 30 min
before you add the baking soda
So at this point the beans are semi cooked, add 1 teaspoon of baking soda and some salt.
As you can see the baking soda is foaming and that is normal
Give it a stir and add the rice
Like in the previous method one i wont be adding more water, but keep an eye on it as
it cooks
Cover the pan with its lid or use the aluminum foil method
After cooking it for about 20 minutes it should look like this
You will know when its done when the beans and rice are soft.
At this point it will look a bit pale
But don't worry because as it oxidizes, the color will change a bit, it will get a
bit darker
So now you have your Waakye, on the left side with the sorghum leaf and on the right with
baking soda
Waakye is not eaten all b itself, it is eaten with tons of condiments like spaghetti and
salad, meat,sometimes an egg and avocado
But most important is the Waakye stew which is a tomato based stew usually with beef or
fish
Then you can also add Shito, a hot black pepper sauce
Top it off with some soaked Garri
And add some meat or fish
