Now, when it comes to eating burgers,
everyone loves a burger that has some sides with it.
But how would you like to have a burger
that's topped with chili, brisket, and mac and cheese?
You can get that all here, at Smokin Hot Grill,
located in McCalla, let me tell you,
that burger's so big, I couldn't even finish it.
- Well, let me tell you, Joy,
what we do is get fresh sirloin, is what we do,
we don't freeze it, it's always fresh.
And you can see how well that's marbled.
It's got a lot of good fat in there.
So it says 80/20, but it's more like 75/25
because everybody knows, if you get a good burger,
it's gonna have some fat in it.
It's a pound together, so it's a half a pound burger,
fresh sirloin, and that's how we start every one
of our burgers.
I tell you that it's basically a basic chili mac,
but we have people come in all the time,
they put some jalapeños on there,
they do lettuce, tomato, onion, all that.
I'm gonna show you a basic one,
'cause this is the one we do the most.
Now, of course, we put number two sirloin patty right there.
And then next we put our mac and cheese on top.
All right, and last, but not least,
we put the brisket chili over the top.
An egg on there.
Anyway, we want it nice and messy,
so you're eating the whole thing.
The way, so you've got a pound,
and you've got a pound of chili,
you've got about a pound of mac and cheese,
so you've got about four pounds there.
You know, we talked about how long it's gonna take,
how long is it gonna take to you?
- Man, probably until the next segment,
Don, and I wouldn't even enjoy it, this is huge.
This is even bigger than what I'm accustomed
to eating over here, like, you could feed this
to the 4,000, I mean, really, this is huge.
Okay, so is this, is it the girl way to use a fork?
Do, am I supposed to do the man way and pick it up?
- I think what you do is you go in with a fork,
you get a little bit of the meat,
you get a little bit of the chili,
you get a little bit of the-- - Burger, the sirloin.
- The mac and cheese, and then, that way,
you kind of get the mixture,
you kind of know what it's about.
- Oh, yeah, that's good.
- Yeah, that mac and cheese is.
- So can I take it apart and put it on the side--
- By all means, go ahead. - Yeah, however you want to.
Our boys come in and eat it in a bite,
it's incredible to watch, but.
- So basically, the pretty lady's challenging me
to pick it up with my hands? - And just take, you know,
dig into it. - Well, wait a minute.
Now, if I eat this big burger,
will I still have your body? - Oh, yes, yes, of course.
- Well, since she said that, I'm trying
to get her body over here, oh, Lord,
I'm gonna need some help over here.
- That's funny. - I need the water hose.
- I'm doing it, oh, my God, that is huge.
- There's an egg and everything there.
- But I'm gonna sit over here and work
at Smokin Hot McCalla, I'm gonna try to finish this.
This, you may not see me for a couple weeks,
put out the Amber Alert, I'm in Smokin Hot,
finishing this burger.
- It's a burger coma, is what it's gonna be, so.

Before the break, I took you to Smokin Hot Sports Grill
in McCalla, and showed you their gigantic chili mac,
double patty burger, but next,
they also make something that is one of my favorites,
as well as, yes, on the food tour,
and that is his brisket.
When I tell you it is the best I've ever had,
it is so tender, you don't even need teeth.
- He knows about Reubens, you always have sauerkraut,
you always have Swiss cheese,
you have usually pickled brisket,
is what you have, but this one's quite different
because we use our smoked brisket,
instead of a pickled brisket,
like most people used to have, like, corned beef.
And the thousand island, well, it's my Aunt Betty's recipe,
and it's very unique, what's it--
(overlapping chatter)
- We actually have the marinara,
the ketchup, brown sugar, Pepsi,
a few of those little hidden ingredients
that he has in that recipe makes it very unique,
it's very flavorful.
- [Don] And then we toast it all on sourdough Texas toast,
and you literally get a sandwich
that just melts in your mouth,
this is our number one seller, and it has been
from the beginning, and still, to this day,
everybody walks in, and they say,
"I want a smoked brisket Reuben."
- Well, one by far.
- Well, I'm curious 'cause you're talking
about thousand island dressing in here,
with Pepsi-Cola, and all this goodness in here.
- All the good stuff. (overlapping chatter)
- Well, that was a good sandwich.
I taste the butter on this toast over here
that's crunchy, a little tangy with the meat,
it doesn't taste weird. - No.
- You know, I'm thinking thousand island
with some Pepsi-Cola, it's gonna be weird,
but this is really good, but this brisket,
though, it's something--
- It's what we're becoming known for, is brisket.
- It really is. - In any form.
- I'm telling, you don't even need your teeth here
to eat this brisket, that's how tender that is.
- That's true, we have so many people,
you know, they'll come in, and they'll say,
I don't like brisket, or I never have liked brisket,
and we'll go and get 'em a sample, and bring back,
and they'll eat it, and they'll look at me,
and they'll go, "Is that brisket?"
I'll go, "Yeah, it's brisket."
- It's so good, so I know what a Reuben,
you use already, you know, having stuff on it,
but the sauce is, it's so good,
would it be rude to put some of your sauce on it?
- No, of course not.
- We have some that do that, we have quite a few
that do it, that try different ones from time to time.
- [Don] The sauces we came up with,
we've got two that are actually fruit sauces,
one is peach, and the other one is apple butter.
We also have South Carolina barbecue sauce,
which is a tangy mustard base,
North Carolina, which is a tomato base,
and some vinegar base, too, and, you know,
outside of that, you've got the honey barbecue,
and everybody knows what honey barbecue is, so.
- I love that apple butter sauce, it is so good.
It's one of my favorites, it's tangy,
but I like the savory sweet combination,
that's one of my favorites, so I may have to,
on the commercial break, drizzle some of that on there,
but this is an amazing sandwich.
I mean, if you want a brisket sandwich,
something that's hardy, that got that salty
but sweet flavor, with this brisket melting in your mouth,
this is truly it, I see why it's a customer favorite.
- Great. - Yes, ma'am, it sure is.

their hands, because, for me, I don't ever,
I never, ever wear the gloves.

so they want, like, a combination.
So we build this one.
Okay, together, a lot of people,
they love the catfish, because a catfish is not
that fishy, that, you know, tilapia and the whiting.
So we sale a lot of catfish, and the shrimp.
- Well, it looks really good, and I'm all
about some fresh seafood, love some shrimp.
(mumbles), this is a good, this is good,
it's good and crunchy, nice size shrimp,
I like that, 'cause I'm not too fond of that popcorn shrimp.
- Popcorn shrimp, okay, so you can, with the,
the different sauce, it's a cocktail sauce
and a tartar sauce.
- Now, y'all make this here? - Yeah.
- Me, I'm not a big sauce person,
'cause I just like it straight fried,
but I'ma try it, 'cause you like it.
- Okay.
- Okay, it has a nice flavor to it, you know, yeah.
So that's good, I love fried shrimp.
I grew up in Mobile, so I know fresh seafood
when I taste it, love the large size shrimp.
- Appreciate it.
- And I hope it's not bad, but I like to eat the whole tail,
'cause I like the whole crunch.

Next time you have a taste for some wings,

I like to leave my evidence behind.

so you've got the art of cooking chicken,
I've got the art of eating chicken.

- These taste like some good wings I want right
after church. - Hey, that's what they are.
- Do y'all have poundcake to go with this?
- We have red velvet and white velvet cake.
- We're gonna have to get some of that next.

you've got a little bit too much left on there,
because you got 'em there, chew 'em up.

you can put it on your okra, but it's very flavorful,
and it's just an accompany to the seasoning
that you already have on the wings.
It puts you on the mind, I would say,
more of a flavor (mumbles) that you would probably taste
in New Orleans, because it's a mix
between a blackened and a Cajun.

Our Philly's come in beef or chicken,
'cause some people don't like beef,
and they eat chicken, but we toast your bun,
as well, and so it's a really great flavor,
and it's very popular here, and you,
everything here is cooked to order.
We don't drop it until, there's nothing
in the back that's just sitting,
waiting for someone to come and order.
